Since there's a very high chance we'll be having this delicious low carb dinner twice this week, I figured I should share it so that you can have it too! This is a quick and easy recipe that can serve 4, but for just the 2 of us it made for a great lunch the next day. I N G R E D I E N T S:

I've shared my current favorites. What are yours? Enjoy! When you're trying to eat healthy and your husband says how about Kabobs?! You say YES! These babies we're amazing and so easy to make!
What you need: 2 garlic cloves 1/4 cup honey 1/4 cup vegetable oil splash of orange juice 2 boneless skinless chicken breasts 1 zucchini 1 yellow squash 1 red pepper 1 red onion skewers (or chop sticks) Step One: Cut thawed chicken into bite size pieces. Mix garlic, honey, vegetable oil and orange juice. Pour into a ziploc and add chicken. Let marinate. (1hr+) Step Two: Soak sticks in water to avoid catching fire on the grill. Slice vegetables. Step Three: Prep Kabobs and start up the grill. Cook for about 20-25 minutes occasionally rotating the kabobs. Enjoy! |
